Author: ItchyFeet
Subject: 11304
Posted: 26 October 2007 at 11:28pm

When I used to go to a dietician, she couldn't fault this recipe (without the coconut for me though). I love it with yoghurt and fresh or canned fruit.

8C rolled oats
3C cooking bran
2C wheatgerm
1C coconut
3/4C brown sugar (or less depending on how sweet you like)
2tsp cinnamon
2TBS each sunflower and sesame seeds
3/4C sultanas (I also use chopped dried dates and apricots).

I cook x2 in a roasting dish, medium oven for half an hour. Make sure you stir well once during cooking otherwise the sultanas on the top burn and the sides go a bit brown and the sugar tends to clump. Stores fantastically.

Another thing I love is poached couscous. Basically just add heaps of milk to couscous, and slowly poach it on the stove until most of the milk is absorbed (it will continue to do so when taken off the heat). It is delicious with cinnamon added when cooking, then served with natural yoghurt and fruit (fruit compote is delicious and you can put heaps of presoaked different dried fruits for variety).

Put in the oven and toast until nice and golden - then add dried fruit, seeds - (toasted pumpkin seeds are soooo yummy), and whatever. the edmonds cook book has a recipe I think

I bought some organic millet puffs today as I'd like to make Andy some muesli as I'd be buggered if I'm going to buy him stuff that is 44% sugar! Was thinking I could make up a big container of the cereal part (millet, flakes and stuff) and then have wee jars of cut up dried fruit, seeds, coconut etc. That way I could change the flavour often. Or am I being a geek??! lol I'm on a no nasty numbers and chemical stuff crusade. One baby mouthful at a time.
