Add potato and stock, simmer about 20 mins. You're meant to mush it up, but I like it better lumpy.<br />]]>

Sounds weird but it was so good!<br /><em><br />West African Peanut Soup<br />As found in “Sundays at Moosewood Restaurant” .<br /><br />2 cups chopped onions<br />1 Tbsp peanut or vegetable oil<br />˝ tsp cayenne or other round chiles  <br />1 tsp grated peeled fresh ginger root <br />1 cup chopped carrots (chop them very fine or grate if you don’t have a blender available)<br />2 cups chopped sweet potato<br />4 cups vegetable stock or water<br />2 cups tomato juice<br />1 cup smooth peanut butter<br />1 cup chopped scallions or chives (These are an integral part of the soup, not a garnish - add a whole bunch in before serving, it adds a nice balance to the sweetness.)<br /><br />Sauté the onions in the oil until just translucent. Stir in the cayenne and fresh ginger. Add the carrots and sauté a couple more minutes. Mix in the potatoes and stock or water, bring the soup to a boil and then simmer for 15 minutes, until the vegetables are tender. <br /><br />Using a blender, purče the vegetables with the cooking liquid and the tomato juice. (If a blender is not available, a vigorous and thorough mashing may substitute). Return the purče to the soup pot. Stir in the peanut butter until smooth. Taste the soup, its sweetness will depend on the sweetness of the carrots and sweet potatoes. If it’s not there add just a little sugar to enhance the other flavors. Feel free to refrigerate this base for up to a week. <br /><br />Reheat the soup gently, being sure to prevent scorching. If necessary, you can add more water, stock or tomato juice for a thinner soup. Serve topped with plenty of scallions or chives. </em>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;<span style="font-size:10px"><br /><br />Edited by MissShell</span>]]>

Boil up 1 plus chicken carcasses (I got 3 from the supermarket for $2.11 last week) with a diced onion. After about an hour or so, turn off andremove the carcasses. When a bit cooler, pull chicken off the bones and put into the stock. If not having that night, can put in the fridge so can skim off any fat. Add grated carrot and lots of corn, some sage and some noodles. If you want to extend it a bit just add water and some dried chicken stock.Lastly, add whatever else you want - gotta love soup recipes! lol &nbsp;I usually make this really thick with lots of noodles. YUM! </P>]]>

That's the best way to do pumpkin.<br /><br />Alrighty, another kid friendly soup.<br /><br />SPLIT PEA AND HAM<br /><br />2 and 1/2 cups green split peas<br />4 rindless bacon rashers<br />1 onion, roughly chopped<br />2 carrots, sliced<br />1 celery stick, sliced<br />10 and 1/2 cups cold water<br />1 sprig fresh thyme<br />2 bay leaves<br />1 large potato, roughly diced<br />1 bacon hock<br />freshly ground black pepper<br /><br />Put the split peas into a bowl, cover with cold water and leave to soak overnight.<br /><br />Cut the bacon into small pieces.  In a large saucepan dry fry the bacon for 4-5 minutes or until crisp.  Remove from the pan with a slotted spoon.<br /><br />Add the chopped onion, carrots and celery to the fat in the pan and cook for 3-4 minutes until the onion is softened but not brown.  Return the bacon to the pan with the water.<br /><br />Drain the split peas and add to the pan with the thyme, bay leaves, potato and bacon hock.  Bring to the boil, reduce the heat, cover and cook gently for 1 hour.<br /><br />Remove the thyme, bay leaves and hock.  Process the soup in a blender or food processor until smooth.  Return to a clean pan.  Cut the meat from the hock, add to the soup and heat through gently.  Season with plenty of freshly ground black pepper.  Ladle into warm soup bowls and serve.<br /><br />Serves 4.]]>

Cut the pumpkin into big chunks and put in a microwave safe bowl (with the skin left on) with lid and cook for 10 minutes then scrape our of skin.  Very easy and makes making soup heaps easier and alot less stressful.......]]>

No need for stock as cooking it for so long brings out the flavour of the veg.<br /><br />I'm going to try this in the slow cooker this week sometime  too.<br /><br />Potato & Leek Soup:<br />- use about 1 leek for 3 potatoes.<br />- slice leeks and dice potatoes. <br />- boil in veg stock until cooked. <br /><br /><br />mmmm yummy!]]>

Now add some cream and about 2T of chopped thyme.  don't boil, but heat gently and serve.<br /><br /><br />my kids LOVE this soup]]>

    <![CDATA[<strong>Author:</strong> <a href="https://www.ohbaby.co.nz/forum/member_profile.asp?PF=17994">bookwyrm</a><br /><strong>Subject:</strong> 17340<br /><strong>Posted:</strong> 18 May 2008 at 3:53pm<br /><br />Ok, I found my Mum's Pumpkin soup which is great for the kiddies.<br /><br />MUM'S PUMPKIN SOUP<br /><br />1 pumpkin (or a mix of pumpkin, carrots, parsnip or kumara).<br />2 large carrots<br />6-8 large cloves of garlic<br />1 pinch cayenne pepper<br />2 teaspoons of curry powder (optional)<br />1 tablespoon olive oil (or whatever you've got on hand)<br />6 cups water (or stock if pref.)<br /><br />Dice vegetables.<br /><br />Finely chop onions and garlic and simmer lightly in oil until soft in a large saucepan / pot.<br /><br />Add pinch cayenne pepper and two teaspoons of curry powder (optional - but yum).<br /><br />Add pumpkin and carrots.  Stir in well for 5 minutes.  Add liquid (water or stock).  Simmer until soft.  Puree in blender.<br /><br />Serve!]]>

I will post my favourite one, but it's not exactly kid friendly, but great for freezing and pulling out when you just don't feel like another night of chicken nuggets and chips.<br /><br />CURRY LENTIL SOUP<br /><br />1 cup brown lentils<br />2 onions<br />2 cloves garlic<br />1 tablespoon oil<br />1/2 teaspoon chilli powder<br />1 and 1/2 teaspoon hot curry powder<br />8 cups vegetable stock<br />2 tablespoons tomato paste<br />2 stalks of celery (optional)<br />salt and pepper<br /><br />Wash lentils and cover with cold water to soak.<br /><br />Peel onions and chop finely.  Crush and peel garlic.<br /><br />Heat oil in large saucepan and saute onion and garlic on low for 5 minutes.  Add chilli powder and curry powder.  Cook for 30 seconds.  Add vegetable stock and tomato paste.<br /><br />Drain lentils and add to pan.  Bring to the boil.<br /><br />Cover and simmer for 45 minutes.  Use blender to puree when cool.  Wash and slice celery finely and stir through.<br /><br />Serve with your favourite crusty chunky bread.<br /><br />YUM!!!!!!]]>

I only know how to make one soup, so I'll start off with that and you can intrigue me with your own recipes!<br /><br />1 bacon hock/pork chop/etc<br />2 potatoes<br />2 carrots<br />1 kumara<br />tonnes of water<br />1 onion<br />1T chicken stock<br />salt to taste<br /><br />boil the chop in plenty of water for about 4 hours. When about 1 1/2 hours before meal time, add in the other ingredients. Keep topping up the water and stirring every 30 mins approx, letting it reduce to your preferred thickness at the end. (sorry, not too specific)]]>
