Author: Jay_R
Subject: 18087
Posted: 10 June 2008 at 10:30am

My adaptation of a Jamie Oliver recipe:

3 rashers of streaky bacon - sliced in to small strips
1 chicken breast - cubed
1 zucchini - halved and sliced thinly
10 cherry tomatoes - halved
1 cup minted baby peas
1 egg
100mls approx of cream
Black pepper to taste
Parmesan

Cook the bacon in a heavy based frying pan till crispy, add chicken about halfway through so they end up cooked at the same time. Put pan aside and add zucchini and cherry tomatoes.

In a bowl whisk together egg, cream and black pepper. Set aside.

Cook pasta, adding the minted peas for the last few minutes so they are not overcooked.

Quickly heat through the bacon, chicken and vegetables, so they are hot for serving - cook a bit longer if you prefer your zucchini not so crunchy.

Drain pasta and peas, quickly grate parmesan over top, then add meat and vegetables and the egg and cream mixture.

The heat from the piping hot pasta and meat cooks the egg and you end up with a lovely silky sauce.

This is so easy, and delicious - its a huge favourite in our house!
