Do you want a scrummy dessert!

Pre-heat the oven to 250degrees.
Whizz 6 egg whites into a stiff mixture, honestly I use 'turning the bowl upside down over my head' as the test.
Stir in a couple of dessert spoons of sugar.

Defrost frozen berries and place in an oven dish, put icecream on top of this. and then the egg mixture on top.

Put in the oven until the top is golden brown*.

delish!!

I'm not sure what the allergies are in your house though I made this for dinners when I was dairy free and used soy icecream.
It guaranteed silence and licked clean bowls after.

Right I'm off to get my stash of chocolate

I think the original recipe uses sponge as a base but I find without it is filling enough

*This takes about 5 - 7 minutes and the icecream is still frozen/cold when it comes out. The good / bad thing about it is it all has to be finished

Edited by tishy

I have 3 bowls and tongs on the go I normally do them on the george foreman but should do fine in the oven / grill too.

I reckon you could do the same with brussel sprouts as you did with asparagus. yum!

    Author: Maya
Subject: 21878
Posted: 22 October 2008 at 8:45pm

I've gotten a bit complacent in the kitchen recently, cooking the same things over and over again just coz I know the kids will eat them. But this week I've been a bit experimental and the results have been surprising!

Inspired by the asparagus thread on here I bought a bunch of asparagus, I didn't expect the girls to like it and I *knew* Willie wouldn't but I figured I could eat the whole bunch even if no one else wanted it (mmm, asparagus!). Well I roasted it with a little garlic butter and it all disappeared! The gremlins ate theirs, Maya came back for seconds and Willie was disappointed that there wasn't enough for him to have seconds. Awesome - another green veg to add to my repertoire!

And today we had the spinach and ricotta cannelloni from the recipe Mazzy posted a few weeks ago, again I didn't expect anyone to eat it coz none of them like spinach but again it all disappeared and again Maya came back for seconds!

So now I'm feeling really adventurous. Anyone got any other things I can try?!
