It is fantastic. You freeze the dough for half and hour - before cutting into cookies and baking.... But you could leave it in the freezer overnight (it does have an egg in in - so perhaps you could leave it for a week at the most) and chuck it in the oven for fresh & quick cookies in the morning. So simple.

I add a teaspoon of peppermint essence for a choco-mint explosion.

Here's my inclusion, tastes a lot like the griffins choc chippie:

1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 1/2 teaspoon vanilla
2 cups flour
2 1/2 cups blended rolled oats (blend in a blender to a fine powder)
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
340g chocolate chips
110g grated chocolate

Preheat oven to 190 degrees. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder and baking soda. Add chocolate chips and grated chocolate.. Roll into balls, and place 2 inches apart on an ungreased cookie sheet. Bake for 10 or 11 minutes.
Mix well.
Place walnut sized balls onto a greased tray leaving room for spreading and gently flatten to about 1cm thick. (The mixture firms up on standing - if it is too soft to form into balls initially you can just spoon it out onto the tray.)
Bake 8-10 minutes or until golden brown.
