We are parents of a young daughter, challenged with cow milk protein allergy. On top of this, we added white egg and soy ... so we have a pretty strange cuisine habits :-).

G/F flour mix can be anything you want. Usually on a rice flour base plus add in that gum stuff. Too lazy to get up & look what it is.

Emmi, have you tried this site? They have loads of vegan, gluten-free cake recipes (and others) with different types of flours. Some of them have slightly crazy ingredients but I'm sure you could source them from somewhere?

Ds1 had a blood test to check iron levels the other day, they did a coeliacs screen as well the doctor wants to talk to us about possible coeliacs disease, so if he has it I will be needing these!

Yep you can. I've made it with out the butter, cant tell the difference cause I've made chocolate icing.

Loving this cake I also leave out the vinegar & vanilla essence. Vinegar is a preserver which it doesn't need. The Best GF Chocolate Cake Recipe:

Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. I flour the pan using cocoa powder so it won’t leave white marks on the cake and keeps it totally gluten free.

Ingredients
125g     dark chocolate, chopped
125g     butter
185g     (¾ cup) white sugar
60g     (½ cup) cocoa
3 eggs     beaten
1 tsp     vanilla essence

Preparation Method:
Preheat oven to 150⁰C. Great pan (20cm round cake pan) and dust with cocoa powder.
Melt the chocolate and butter together in the top of a double boiler or in a basin over just simmering water.
Remove from heat and stir in sugar, cocoa, eggs and vanilla essence. Pour into prepared pan.
Bake in preheated oven for 30 minutes.
Let cool in pan for 10 minutes then turn out onto a wire rack to cool completely.
Slices cam=n be reheated for 20-30 seconds in the microwave before serving
