I love having them with a selection of sauces.<br /><br />My recipe that I use is:<br /><br />Put 1 can of creamed corn into a bowl, stir in 1 egg and then add 3/4 cup-1 cup of flour, enough to make a good batter, 1 tspn baking powder and salt and pepper to taste.  If you add to much flour then you can just mix in some water to make it to the consistency that you want.<br />I sometimes add coriander and cumin if I want them to be a bit spicy.<br /><br />If you only have whole kernal corn then save the liquid that it is in and use that to thin down the batter.<br /><br />]]>

Alex is hoeing into one as I type.<br /><br />I just put<br /><br />1 tin creamed corn<br />2 courgettes<br />1 leaf silverbeet<br />1 tomato <br /><br />cut up and mix together<br /><br />Mix together<br />1 c flour<br />1t baking powder<br /><br />Mix everything together and cook tablespoon fulls (or whatever you want) until brown on either side.  <br />]]>

Nice texture with the potato and not too gluggy. It has a mild spice - I didn't think my toddler would like them - but they went down well!  So easy and only 4 ingredients - so you can whip them up in no time.<br /><br />FOOD IN A MINUTE - CAJUN CORN & POTATO FRITTERS<br /><br />Time & Serves<br /><br />&nbsp;&nbsp;&nbsp;&nbsp;* Preparation time: 15 Minutes<br />&nbsp;&nbsp;&nbsp;&nbsp;* Cooking time: 20 Minutes<br />&nbsp;&nbsp;&nbsp;&nbsp;* Makes 15<br /><br />Ingredients<br /><br />&nbsp;&nbsp;&nbsp;&nbsp;* 450g pkt Wattie's Homestyle Mashed Potato<br />&nbsp;&nbsp;&nbsp;&nbsp;* 400g pkt Wattie’s Frozen SteamFresh Cajun Style Vegetables<br />&nbsp;&nbsp;&nbsp;&nbsp;* 3 eggs, beaten<br />&nbsp;&nbsp;&nbsp;&nbsp;* 1/2 cup self-raising flour<br />&nbsp;&nbsp;&nbsp;&nbsp;* oil for frying<br /><br /><br />Method<br /><br />1. Place Wattie’s Frozen Homestyle Mashed Potato in a microwave-safe bowl and cover. Cook on high for 6-8 minutes. Remove from microwave and stir until fluffy; set aside to cool for a few minutes.<br /><br />2. Place both bags of Wattie’s Frozen SteamFresh Cajun Style Vegetables in the microwave and heat on high for 4 minutes. Carefully cut open and drain off any excess water and add to the mashed potatoes.<br /><br />3. Stir in the eggs and sift in the flour. Mix together until smooth.<br /><br />4. Heat oil in a non-stick frying pan over a medium heat and cook quarter cupfuls of the mixture for 5-7 minutes or until golden brown, turning once.<br /><br />5. Serve as a brunch or light meal with bacon and slices of avocado.<br />]]>
