Can't quite remember the details but I think they were based on char-grilled veges (capsicum, courgette, etc) mixed through soaked couscous and dressed with lemon juice, olive oil and maybe chilli?]]>

Then put this on top:<br /><br />Mix up 5 tbsp olive oil, 1 tbsp balsamic vinegar and 1 tbsp sweet soy sauce (can use normal).  Toss some shallots or small onions and two chillies (I just use a small amount of that ready chopped chill that you can get) in the oil mix and tip into a shallow roasting dish, also add some cubed butternut pumpkin and roast till all cooked, stirring at least once.  Remove from oven and stir in some chopped thyme and allow to cool a little.<br /><br />Chop some parsly and garlic together and mix wtih some chopped walnuts.  Stir into veges.  Pile on top of the couscous and crumble on some feta.<br /><br />It is so yum and you can easily play with the ingredients to suit your tastes.]]>

Boil couscous add the butter and stir thru the roasted veges - could serve with a bit of aioli as a dressing it is just yummy and its nice eating cold for lunch the next day.]]>
