I made some last weekend and it was so nice.<br /><br />Thinly slice two leeks and cook in 50grams butter till soft, add 2-3 good size peeled potatos and cook a little longer.  Add 3 cups of stock (I used vege stock) and cook till potatos are cooked.  Remove from heat and at 1/2 cup of milk, let cool, add salt and pepper to taste then puree till it is the texture you want.  You could also add in some chopped parsley if you like.  Ideally served with a dollop of sour cream on top, but can have it without.  ]]>
