Add salt & pepper.<br />Add  the stock/water so it just covers it and boil till potatoes are done.<br />Add the milk and bring to boil and stir, then blend. You might have to add some more water or milk depending on how thick it is.<br />Then add the spinach (I use fresh as I find the frozen spinach adds to much water) and blend again.<br /><br />As a topping I chop and then fry some bacon with some chopped up spring onions in it.<br /><br />Of course you can do the same without the spinach but I like it as it tastes nice and fluffy and fresh! <img border="0" src="https://www.ohbaby.co.nz/forum/smileys/smiley10.gif" border="0"> <span style="font-size:10px"><br /><br />Edited by susyl</span>]]>

Add the cubed potatos and cook in the stock till soft.  Take off heat and add the milk.  Cool, then puree till desired consistancy.  Season with Salt and pepper, reheat and add chopped parsley.<br /><br />Yummy.]]>

If we want it chunky we just don't blend it. ]]>

    <![CDATA[<strong>Author:</strong> <a href="https://www.ohbaby.co.nz/forum/member_profile.asp?PF=20340">amykt</a><br /><strong>Subject:</strong> 33239<br /><strong>Posted:</strong> 04 May 2010 at 3:28pm<br /><br />I have a scrummy recipe but it's not chunky (although you could just not blend it at the end??)<br /><br />POTATO and LEEK SOUP:<br /><br />1 leek<br />2 Tb marg/butter<br />2 Tb flour<br />2c milk<br />4c water<br />6-8 diced potatoes<br />2 Tb powdered chicken stock<br />1 can evaporated milk<br /><br />- slice leek and cook in butter<br />- add flour, and while whisking, slowly add the milk and then the water<br />- add potatoes and stock powder and simmer with the lid on for 20 minutes<br />- pour in the evaporated milk and heat through<br />- blend in food processor<br /><br />Enjoy! <img border="0" src="https://www.ohbaby.co.nz/forum/smileys/smiley4.gif" border="0"> ]]>
