Make it every other week and use it for one dinner and then sandwiches. Generally have chicken and luncheon the alternate week. We use a similar one to caraMel except i add two eggs, some flour and some grated carrot and occasionally some mixed vege. We also don't always use the sauce. I have also used marmaite with some boiling water as sauce lol wasn't too bad, my nana used to do something with marmite and meatloaf but what i did didn't taste quite like hers
I also find it is great to give in thick slices to henry for lunch - very healthy and not messy as it stays together when its cold.

Shape it into a loaf on a peice of baking paper, then use the baking paper to lift it into the slow cooker. Cook for 6 hrs on low.

    Author: SpecialK
Subject: 33706
Posted: 28 May 2010 at 12:58pm

The one that I made the last few times was basically:

1kg beef mince
1 onion finely chopped
1 clove garlic finely chopped
2 T chutney or tomato sauce -whatever you have
1 egg beaten
Half a cup of breadcrumbs OR 4 slices bread soaked in milk and mushed up (I find this actually gives a nicer texture. You need about 1/2-3/4 c milk)
Herbs - fresh or dried, whatever you like
Salt and pepper

Mix the whole lot up with your hands, shape into a meatloaf. Place in big oven dish, and cover with slices of bacon.

I like to put chopped veggies e.g. potato, pumpkin, beetroot, kumara around it and bake for 1 hr at 180 degrees.

I also sometimes make a mushroom sauce to go with it - fry off a small onion and a clove of garlic, add some chopped mushrooms (as much as you like and whatever you have on hand), when all nice and golden add about a cup of chicken stock, bring to boil and thicken with cornflour if you like or cook until reduced by half.

Hope this helps!

Unfortunately google is coming up with hundreds of really hard looking ones to make!!

So does anyone have a really easy recipe? Like, really easy for us to try to make??
A lot of them seem to have sauces, is it best to make it with a sauce? Does it dry out without? Would it be easier first time to make one without sauce??
