The pastry is really easy actually - I use foodbazaar lots, they have a really good data base of recipes with ratings etc.

emiloly - you can then fill them with creme patissiere - (can't spell it). it's like a cream/custard - NIIIIICE (and even better, easy to make). Profiteroles are just like eclairs hun, except they are small and round. They traditionally have custard as the filling, or can be made into 'cream puffs' by using cream instead. Do you have a good choux pastry recipe?
