Oh, and I used the full amount of butter (not sure why...just did!).</P><P align=left>This is my new favourite truly gingery gingerbread biscuit recipe.&nbsp; I think I'll use MamaT's recipe (with added fresh ginger) for making shape biscuits and this one for anything else.</P>]]>

Sorry HM, don't have precise measurements for the grated ginger, but knowing me used a couple of tsp of finely grated ginger.  Tip: Unless its really fresh its easier to grate ginger if you keep it in the freezer and grate it from frozen.  Oh and I found the molasses really made a difference to the authentic taste.  See how you go, always after improvements.<img border="0" src="https://www.ohbaby.co.nz/forum/smileys/smiley2.gif" border="0"> <br /><br />Gingernut Biscuits<br /><br />Ingredients<br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;150 g butter <br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;250 g sugar <br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;1 tablespoon golden syrup <br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;1 egg <br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;250 g flour <br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;1 teaspoon baking powder <br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;1/2 teaspoon baking soda, <br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;3 teaspoon ginger <br />•&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;1/2 teaspoon cinnamon <br /><br />Method<br /><br />Preheat the oven to 180 C.<br />Mix together butter and sugar until pale and creamy, mix in golden syrup, egg and combined dry ingredients.<br />Roll into balls and place on cold trays, allowing enough room for biscuits to spread. Do not flatten biscuits. Bake 15 – 20 minutes until rich golden colour.<br /><br />My Notes:<br />Lessened the butter to 125g, added grated fresh ginger, used ˝ and ˝ molasses and golden syrup, used all spice instead of cinnamon, added a bit more flour. <br />]]>

Preheat oven to 180C. Line 2 baking trays with baking paper.<br />2. Sift flour, baking soda and ginger together and place in bowl or food processor. Add brown sugar.<br />3. Add butter and rub in with fingertips, or pulse in food processor until it resembles fine breadcrumbs. Add egg and stir or pulse to mix (if dough seems too sticky, add a little more flour). Wrap in glad wrap and put in fridge for 30mins.<br />4. Roll out on lightly floured surface until 5mm thick. Cut out shapes and place on tray.<br />5. Bake for 8-10mins or until golden.]]>
