Hahaha wish I'd come across this sooner!! We counted up and had 155 eggs the other day :sigh: and typically I've gone right off them with morning sickness We gave most of ours to the local foodbank but since we're getting over a dozen a day I'm going to start freezing them for next winter. I'm gonna break them into muffin trays, freeze them then tip them into ziplock bags and see how that works. Haha, Red, I have 3 dozen in the fridge at the moment, and am getting between 4-6 most days. As I'm collecting them, I'm thinking to myself, right, so I have to use another 6 eggs today not to get even more building up!

Make a pav and then use the yolks to make a custard to spread on the top of the pav along with whipped cream.

My mum makes it like that and it's absolutely devine.

Thats a good idea Bizzy, will try the foodbank in town. Yoghurt cake is no good for dairy free, but thanks anyway

I used to sell some at work, but I'm on leave now so don't go into the office regularly. And DH works at a small company so he gives his officemate some, but even he can't help us eat them all.

Will have a look at the quiche recipes - I guess I could make them with ricemilk? That's the trouble that most of my egg recipes are not dairy free. If they are, they are too eggy for me (Did I mention that I love chooks, but not so much eggs?!)

Bacon and egg pie would be good for DH's lunches, that's a good idea too.

I love this quiche.

I change it up sometimes and do bits of cut up sausage instead of bacon, and add extra vege - spinach/broccoli/pumpkin/potato. Fritatta takes a lot of eggs... i have a yoghurt cake recipe that uses 3 eggs if you want that.

Baked custards for dessert... they use lots of eggs..

My lovely chooks are laying by the truckload at the moment, so my fridge is bursting with eggs. Usually I'd hatch the surplus but given I have other things coming up any day now, I don't want a whole lot of needy chicks to care for as well!

So, what can I make that uses lots of eggs? I'd thought of lemon honey, but I'm dairy free and don't think it'd work with margarine!
