    <![CDATA[<strong>Author:</strong> <a href="https://www.ohbaby.co.nz/forum/member_profile.asp?PF=24104">kelzie_rose</a><br /><strong>Subject:</strong> 41321<br /><strong>Posted:</strong> 12 January 2012 at 11:42am<br /><br />I have a great summer recipe!<br /><br />Kinda takes a little while to make, but it's great cold in the summer heat, but can be reheated also.<br /><br />Packet of orzo pasta (although shape probably doesn't matter!)<br />Few tbsp basil pesto (although I used more)<br />Few tbsp olive oil (although I used more)<br />Pumpkin, kumara, red onion, red pepper, courgette - any other roastable veges you like - cut into large chunks.<br /><br />Boil pasta in rapidly boiling salted water for about 12 minutes, or according to packet. Drain and stir through pesto and olive oil. Chill.<br /><br />Oven roast veges - about 180°C for 60 minutes.<br /><br />Allow veges to cool, then stir through pasta.<br /><br />Keep refridgerated as it's great eaten cold.]]>

I like it though as then people can have it that night or freeze it for whenever.<br /><br />Anyway I'd love some suggestions for what you would take as a meal in this heat!  Thinking rice salad, vege salad, quiche but I'm not that great at these and they would have to be eaten that day or next maybe.  <br /><br />Will also do the usual baking.  Would love any ideas or great recipes you have.]]>
