4 1/2 cups diced apples (roughly 5 medium sized apples, peeled and cored)
1/2 cup vegetable oil
2 cups flour
2 cups sugar
3/4 cup chopped walnuts
2 eggs
2 teaspoons vanilla
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1. Mix apples and sugar together.
2. Add eggs (well-beaten), oil, nuts, and vanilla.
3. In separate bowl, mix remaining dry ingredients together and add to apple mixture.
4. Bake in a greased pan for 60 minutes at 180`C.
