    <![CDATA[<strong>Author:</strong> <a href="https://www.ohbaby.co.nz/forum/member_profile.asp?PF=2583">busymum</a><br /><strong>Subject:</strong> 8517<br /><strong>Posted:</strong> 27 June 2007 at 1:20pm<br /><br />Kaz I got this today from the <a href="http://www.chelsea.co.nz/" target="_blank">Chelsea</a> recipe club (email list):<br /><br /> Banana Choc Chip Muffins<br /><br />Ingredients<br /><br />2 eggs<br />2 ripe bananas, peeled and mashed<br />cup oil (plain vegetable, soya or canola oil)<br />1 cup low fat milk<br />cup Chelsea Soft Brown Sugar<br />2 cups flour<br />4 teaspoons baking powder<br />1 cup chocolate chips<br /><br /><br />Method<br /><br />Preheat oven to 180C. Spray a tray of 12 muffin tins with non stick spray.<br /><br />In a large bowl beat the eggs, mashed bananas, oil, milk and brown sugar together just lightly. Mix in the flour, baking powder and chocolate chips. Dont over mix the ingredients should be just gently stirred together to combine. Spoon into the prepared tins and bake for 15 - 18 minutes until puffed and golden brown. Cool for 2 minutes in the tins then gently twist and ease the muffins out to cool on a wire rack.<br /><br />Tip: Always soak the muffin tins straight away as soon as youve removed the muffins. This means the tins clean up easily and you dont have to scrub at them and risk ruining their lovely shiny non stick surface.<br /><br />Preparation time: 8 minutes<br />Cooking time: 18 - 20 minutes<br />Makes: 12]]>

The apple and sultana muffins are really really yummy, I add about another 1/2 cup of sultanas to them, and dust the top with brown sugar and cinnamon before baking. YUMMO]]>

    <![CDATA[<strong>Author:</strong> <a href="https://www.ohbaby.co.nz/forum/member_profile.asp?PF=16239">hailstones</a><br /><strong>Subject:</strong> 8517<br /><strong>Posted:</strong> 25 June 2007 at 2:56pm<br /><br />I posted this recipe when I was pregnant, I am really hopeless about recipes so sorry this isn't an exact recipe but the 'rules' work for me - I used to have to make muffins EVERY day in one cafe I worked in - would drive me insane<br /><br />I generally follow these rules....<br />For every cup of flour.....<br />1/2 cup sugar (I use castor)<br />1 egg<br />1 Heaped tsp Baking powder<br />Pinch of salt<br />About 2 Tablespoons oil<br />Milk to combine to that Muffiny Batter Consistancy<br />And then I bake at 190 until ready (skewer test if not sure)<br />Thats my basically how I make all my sweet muffins and add flavours to it, 2 cups of flour makes about 12 smallish muffins,<br />For lemon and raspberry, zest a lemon and add a good handful of frozen rasp (or fresh if you have them)<br />Triple choc Cheesecake...mmmmmm.... add about 2 good tablespoons cocoa, white choc buttons and milk or dark choc buttons to batter, mix cream cheese with some icing sugar and a wee bit of vanilla essence and when you put in tin fill half way up with muffin mix, put a tsp cream cheese mix in and top again with muffin mix. Hope thats not too confusing, I am hopeless at explaing how I make things!!! ]]>
